Lisbon Treats

I’ve spent a lot of time making chocolate desserts lately (not that I have posted any of them mind you), but I realize that chocolate is overwhelming most of the time. Don’t get me wrong, I like chocolate, but not enough to want to eat it for months on end. It’s summer and I wanted to eat something silly and pink, and fresh tasting.

I’ve also spent way too much time reading Bakerella’s posts about different cake pops. And now I want to make some. Though since there are no children around I will opt for bites as opposed to pops. They turned out so lovely that I am posting this immediately.

Lemon Meringue Pie

Looking for something tart and sweet to beat the summer heat? Look no further, the lemon meringue pie is here.

Okay, this pie will take you some time to make. But, I promise that it will be worth it. I was never a big fan of baking things several times and sadly this pie requires that. The crust must be pre-baked and then after filling with the two layers baked again to brown the top. Other than that, this pie is amazing. You simply must make it.

Berry Cold Cream

I’m not really sure this qualifies as ice cream but I will tell you that it is DELICIOUS. If you like light refreshing ice cream and don’t want to buy an ice cream maker and then wait forever for the core to freeze, the maker to churn, and then chill some more, then you’re in luck. If you have two ingredients, a food processor and one minute you too can make an amazing dessert.

PB-Graham Brownie Bites

I went to my favorite coffee shop one afternoon last week. There I met a girl who is absolutely in love with peanut butter. We chatted for a bit about the glory of peanut butter based desserts and I promised to make some of my own for her to taste. This post is for her, because everyone should be well aware of how easy these are to make, how low in calories you can make each, and just how darn delicious they are. I gave some to the concierge at my building and he is absolutely floored with them.

Don’t tell anyone in Germany, but even K, a self-proclaimed peanut butter hater, has been opting for these. Even though I made some without the nutty center just for him.

Pantry Goulash

There comes a day when I can’t think of anything to cook. I want dinner, but I’m just not moved to make anything specific. So I go looking through the cabinets and fridge and freezer to see what there is and what it could become. I just want to use up the random bits of groceries that have been lying around for a while. It clears my conscience from having to throw anything away and (usually) creates a delicious meal from seemingly nothing. Today was one of those days. I didn’t have a plan for anything that I wanted to make. I therefore did not want to go to the store and spend money on more groceries that I was not too excited about preparing.

Today I made goulash from pork.

Lemon Berry Cake

The summer calls for sour lemony flavors. And this cake is just the thing to cheer up your taste buds on a hot summer day. It received rave reviews from the family, with my dad actually suggesting that it belongs on a shelf in a café. Truth is, if Starbucks sold this cake, you wouldn’t have to do so many laps on your jog in the morning. How they get 400 calories into a slice of cake I have no idea. This one will set you back 200 calories if you cut the cake into 12 slices. 130 if you cut it into 18 slices.

Wednesday Cake

In my dessert craving and after eating the half-batch of cookies I made in the beginning of the week I decided that it was time for cake. I wanted something simple that involved chocolate in some way. I ended up with a nice white cake with Nutella Swiss Meringue Buttercream (SMBC) frosting. I left it in the fridge for a night since it was done so late in the evening and just tried it today and it is DELICIOUS.
