Mixed Berry Cobbler

Adapted from The Food Network’s
Anita’s Blueberry Cobbler (Robin Miller 2007)

Mixed Berry Cobbler

2 cups worth of frozen berries (blueberry, raspberry, blackberry or a mix thereof)
1 ½ cups of sugar divided
1 cup all-purpose flour
1 tsp baking powder
½ cup (1 stick) melted butter
¾ cup milk (any fat content)
whipped cream or ice cream for plating
berries for garnish

Preheat the oven to 350º F and coat a 9×12 inch baking pan with butter.

In a bowl combine the berries and ½ cup of sugar and set aside.

Combine the flour, remaining sugar and baking powder in a small bowl.

In a large bowl whisk together the melted butter and milk. Gradually mix in the dry ingredients and blend until the batter is smooth. Pour into the prepared pan, then scatter the berries over the batter letting them sink in without mixing or pressing. Bake until the top is golden brown and the berries are bubbling, 35-45 minutes. Cool slightly before serving. Spoon the cobbler into bowls and top with cream and berries (if using).

As you can see it took a plate full of satisfaction before I could stop to take a picture. I have dreams of one day having the self-control to take a pretty picture of this cobbler on a clean plate.
